Ingredients

  • 12 oz. gluten-free pasta
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 can (14 oz.) crushed tomatoes
  • 1/2 cup vegetable broth
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup chopped fresh basil
  • Vegan Parmesan cheese (optional)

Instructions

  1. Cook pasta according to package instructions.

  2. In a large skillet, heat olive oil over medium heat.

  3. Add garlic and sauté for 1 minute.

  4. Add crushed tomatoes, vegetable broth, salt and pepper to the skillet.

  5. Bring to a simmer and cook for 10 minutes.

  6. Drain pasta and add to the skillet.

  7. Stir in chopped basil.

  8. Serve with vegan parmesan cheese, if desired.
