A delicious, egg-free, dairy-free blueberry cake recipe that’s perfect for any occasion.

Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup unsweetened almond milk
- 1/2 cup granulated sugar
- 1/3 cup coconut oil, melted
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1 cup fresh blueberries
Instructions
- 
Preheat oven to 375°F. 
- 
In a large bowl, mix together flour, sugar, baking powder, and salt. 
- 
Add almond milk, melted coconut oil, and vanilla extract. Mix well until batter is smooth. 
- 
Gently fold in blueberries. 
- 
Pour batter into a 8-inch cake pan that has been greased and lined with parchment paper. 
- 
Bake for 30 minutes or until cake is golden brown and toothpick inserted in center comes out clean. 
- 
Let cool for 10 minutes before removing from pan. 
-
