Ingredients

  • 1 cup uncooked quinoa
  • 2 cups water
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Rinse quinoa well and add it to a saucepan with the water. Bring to a boil, then reduce heat to low and simmer for 20 minutes or until all the water is absorbed. Fluff with a fork and set aside to cool.

  2. In a bowl, combine the cooled quinoa with tomatoes, cucumber, red onion, parsley, and mint.

  3. In a separate bowl, whisk together lemon juice, olive oil, salt, and pepper.

  4. Pour the dressing over the quinoa salad and toss to combine.

  5. Serve chilled.
