How To Make Clean Eating Quinoa Salad Recipe
Fresh and healthy salad made with quinoa, veggies, and a simple dressing. Perfect for a light lunch or dinner.

Ingredients
- 1 cup uncooked quinoa
- 2 cups water
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 2 tbsp lemon juice
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions

Rinse quinoa well and add it to a saucepan with the water. Bring to a boil, then reduce heat to low and simmer for 20 minutes or until all the water is absorbed. Fluff with a fork and set aside to cool.

In a bowl, combine the cooled quinoa with tomatoes, cucumber, red onion, parsley, and mint.

In a separate bowl, whisk together lemon juice, olive oil, salt, and pepper.

Pour the dressing over the quinoa salad and toss to combine.
