Ingredients

  • 4 bell peppers
  • 1 lb lean ground turkey
  • 1 cup cooked quinoa
  • 1/2 onion, chopped
  • 1/2 cup chopped mushrooms
  • 1 garlic clove, minced
  • 1/2 tsp dried oregano
  • 1/2 tsp cumin
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/4 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F.

  2. Cut off the top of the bell peppers and remove the seeds.

  3. In a large pan, brown the ground turkey over medium heat.

  4. Add onions, mushrooms, garlic, oregano, cumin, salt, and pepper. Cook until the vegetables are tender.

  5. Add the cooked quinoa and stir until combined.

  6. Stuff the mixture into the bell peppers and place them in a baking dish.

  7. Sprinkle shredded cheese over the stuffed peppers.

  8. Cover with foil and bake for 30 minutes.

  9. Remove the foil and bake for an additional 10 minutes until the cheese is melted and bubbly.
