Ingredients

  • 2 boneless, skinless chicken breasts, sliced into thin strips
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 inch ginger, peeled and grated
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Add chicken strips and cook until browned, stirring occasionally.

  3. Add garlic, ginger, peppers, and onion to the skillet and cook for 5-7 minutes until vegetables are tender-crisp.

  4. In a mixing bowl, whisk together soy sauce and honey. Pour mixture over the chicken and vegetables and stir to coat.

  5. Cook for 2-3 minutes more until chicken is fully cooked.

  6. Serve hot over rice or quinoa.
