  • ¼ cup unsweetened applesauce
  • 1 egg
  • 1 tsp vanilla extract
  • ½ cup unsweetened almond milk
  • 1 cup blueberries

Instructions

  1. Preheat the oven to 375°F and line a muffin tin with parchment paper liners.

  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.

  3. In a separate bowl, whisk together the honey, applesauce, egg, and vanilla.

  4. Add the wet ingredients to the dry ingredients and stir to combine.

  5. Stir in the almond milk until the batter is smooth.

  6. Fold in the blueberries.

  7. Use a spoon or cookie scoop to divide the batter evenly between the muffin cups.
