  • 2 large sweet potatoes, peeled and cubed
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 can full-fat coconut milk
  • 2 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.

  2. Add the onions and garlic and sauté until softened.

  3. Add the sweet potatoes, coconut milk, and vegetable broth to the pot and bring to a boil.

  4. Reduce heat to a simmer and let cook for 20-25 minutes or until sweet potatoes are tender.
