Ingredients

  • 1 lb dried black-eyed peas
  • 1 smoked ham hock
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 celery stalks, chopped
  • 1 green pepper, chopped
  • 1 bay leaf
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp red pepper flakes
  • Salt and pepper, to taste
  • 4 cups water

Instructions

  1. Rinse the black-eyed peas and soak them in water overnight. Drain and set aside.

  2. In a large pot, add the ham hock, onions, garlic, celery, green pepper, bay leaf, cumin, paprika, red pepper flakes, salt, and pepper.

  3. Add 4 cups of water and bring to a boil. Lower the heat to a simmer and cook for 1.5 hours, stirring occasionally.

  4. Add the soaked black-eyed peas to the pot and cook for another 30 minutes or until the peas are tender.

  5. Serve hot with cornbread or rice.
