How To Make Minty Salmon & Broccoli Frittata

- 6 large eggs
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup fresh mint leaves, chopped
- 1 cup cooked salmon, flaked
- 1 cup broccoli florets, steamed
- 1/4 cup grated Parmesan cheese
- 1 tbsp olive oil
Instructions

Preheat the oven to 350°F (175°C).

In a large bowl, whisk together the eggs, salt, black pepper, and chopped mint leaves.

Heat olive oil in an oven-safe skillet over medium heat. Add the flaked salmon and steamed broccoli, and cook for 2-3 minutes.

Pour the whisked egg mixture into the skillet and gently swirl to distribute the ingredients evenly.

Cook for 5 minutes on the stovetop until the edges start to set.

Sprinkle grated Parmesan cheese on top of the frittata.

Transfer the skillet to the preheated oven and bake for 15-18 minutes, until the frittata is set and golden brown on top.

Remove from the oven and let it cool for a few minutes before slicing.
