Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 jalapeno, seeded and finely chopped
  • 1/4 cup chopped fresh cilantro
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp vegetable oil
  • 8 small flour tortillas
  • Toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa, etc.

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large bowl, combine the ground beef, breadcrumbs, onion, garlic, jalapeno, cilantro, cumin, chili powder, salt, and black pepper. Mix until well combined.

  3. Shape the mixture into meatballs, about 1 inch in diameter.

  4. Heat the vegetable oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5 minutes.

  5. Transfer the meatballs to a baking sheet and bake in the preheated oven for 15-20 minutes, or until cooked through.

  6. Warm the flour tortillas in a dry skillet or microwave.

  7. Fill each tortilla with meatballs and desired toppings.

  8. Serve hot and enjoy!
