Ingredients
- 1 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/2 tsp salt
- 1/2 cup unsalted butter, cold and cubed
- 2-3 tbsp ice water
- 2 cups mixed seasonal fruits (such as apples, pears, and plums)
- 2 tbsp honey
- 1 tbsp lemon juice
- 1 tsp cornstarch
Instructions

Preheat the oven to 375°F (190°C).

In a food processor, combine the flour, sugar, and salt. Add the cold butter and pulse until the mixture resembles coarse crumbs.

Gradually add the ice water, a tablespoon at a time, until the dough comes together. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes.

In a bowl, toss the mixed fruits with honey, lemon juice, and cornstarch until well coated. Set aside.

On a lightly floured surface, roll out the chilled dough into a circle about 1/4 inch thick. Transfer the dough to a baking sheet lined with parchment paper.

Arrange the mixed fruits in the center of the dough, leaving a 2-inch border. Fold the edges of the dough over the fruits, pleating as necessary.

Bake for 30-35 minutes, or until the crust is golden brown and the fruits are tender.

Allow the tart to cool for 10 minutes before serving. Serve warm or at room temperature.
