Ingredients

  • 4 haddock fillets
  • 2 cups of spinach
  • 1 cup of shredded cheddar cheese
  • 1/2 cup of grated Parmesan cheese
  • 1/4 cup of mayonnaise
  • 1/4 cup of diced red onion
  • 2 cloves of garlic, minced
  • 1 tablespoon of fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Place the haddock fillets on a baking sheet lined with foil. Season with salt and pepper.

  3. In a medium bowl, combine the spinach, cheddar cheese, Parmesan cheese, mayonnaise, red onion, garlic, lemon juice, salt, and pepper. Mix well.

  4. Spread the spinach and cheese mixture evenly over the haddock fillets.

  5. Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and the cheese is melted and golden brown.

  6. Serve hot and enjoy!
