  • 1 cup mashed sweet potatoes
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • Graham cracker crust

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare the graham cracker crust in a 9-inch pie dish.

  2. In a mixing bowl, combine the mashed sweet potatoes, cream cheese, sugar, eggs, vanilla extract, cinnamon, nutmeg, and salt.

  3. Beat the mixture until smooth and well combined.

  4. Pour the sweet potato mixture into the prepared crust and smooth the top with a spatula.

  5. Bake for 45 minutes or until the cheesecake is set and the edges are slightly golden.

  6. Remove from the oven and let it cool completely before serving.

  7. Slice and serve the sweet potato cheesecake.
