Ingredients
- 4 pork sausages
- 1 cup all-purpose flour
- 1/2 tsp salt
- 2 eggs
- 1 cup milk
- 2 tbsp Dijon mustard
- 1 cup shredded cheddar cheese
- 2 cups broccoli florets
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions

Preheat the oven to 425°F (220°C). Place the sausages in a baking dish and roast for 10 minutes.

In a mixing bowl, whisk together the flour, salt, eggs, and milk until smooth. Let the batter rest for 10 minutes.

Meanwhile, steam the broccoli florets until tender. Set aside.

After the sausages have roasted for 10 minutes, remove the dish from the oven and pour the batter over the sausages.

Return the dish to the oven and bake for another 20-25 minutes, until the batter is puffed and golden.

While the toad-in-the-hole is baking, heat the olive oil in a skillet over medium heat. Add the steamed broccoli florets and sauté for 2-3 minutes. Season with salt and pepper.

Once the toad-in-the-hole is cooked, remove from the oven and spread the Dijon mustard over it. Sprinkle the shredded cheddar cheese on top.

Return the dish to the oven for an additional 2-3 minutes, until the cheese is melted and bubbly.

Serve the cheesy mustard toad-in-the-hole with the sautéed broccoli on the side.
