How To Make Baked Eggplant

  • 2 medium-sized eggplants
  • 1/4 cup olive oil
  • 2 cloves of garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish


  1. Preheat the oven to 400°F (200°C).

  2. Slice the eggplants into 1/2-inch thick rounds.

  3. In a small bowl, combine the olive oil, minced garlic, dried oregano, salt, and black pepper.

  4. Brush both sides of the eggplant slices with the olive oil mixture and place them on a baking sheet lined with parchment paper.

  5. Bake in the preheated oven for 20-25 minutes, or until the eggplant is tender and golden brown.

  6. Sprinkle the grated Parmesan cheese over the eggplant slices during the last 5 minutes of baking.

  7. Remove from the oven and garnish with fresh basil leaves. Serve hot.
