
How To Make Baked Eggplant

Ingredients
- 2 medium-sized eggplants
- 1/4 cup olive oil
- 2 cloves of garlic, minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan cheese
- Fresh basil leaves for garnish
Instructions

Preheat the oven to 400°F (200°C).

Slice the eggplants into 1/2-inch thick rounds.

In a small bowl, combine the olive oil, minced garlic, dried oregano, salt, and black pepper.

Brush both sides of the eggplant slices with the olive oil mixture and place them on a baking sheet lined with parchment paper.

Bake in the preheated oven for 20-25 minutes, or until the eggplant is tender and golden brown.

Sprinkle the grated Parmesan cheese over the eggplant slices during the last 5 minutes of baking.

Remove from the oven and garnish with fresh basil leaves. Serve hot.
