Ingredients
- 1 cup all-purpose flour
- 1/4 cup unsalted butter, cold and diced
- 2 tbsp sugar
- 1/4 tsp salt
- 1/4 cup heavy cream
- 1/2 cup packed brown sugar
- 1/4 cup golden syrup
- 1/4 cup unsalted butter
- 1/2 tsp vanilla extract
- 1/4 cup chopped pecans (optional)
- Whipped cream, for serving (optional)
Instructions

Preheat the oven to 350°F (180°C).

In a food processor, combine the flour, butter, sugar, and salt. Pulse until the mixture resembles coarse crumbs.

Add the heavy cream and pulse until the dough comes together.

Divide the dough into 4 equal parts and press each portion into a tart pan, covering the bottom and sides.

In a saucepan, combine the brown sugar, golden syrup, butter, and vanilla extract. Cook over medium heat until the mixture is smooth and bubbly, about 5 minutes.

Pour the caramel filling into each tart shell, filling them about halfway.

If desired, sprinkle chopped pecans on top of the caramel filling.

Bake for 20-25 minutes, or until the tarts are golden and the filling is bubbly.

Allow the tarts to cool for a few minutes before removing them from the tart pans.

Serve the sticky toffee tarts warm or at room temperature, with a dollop of whipped cream, if desired.
