- 1 1/2 cups fresh or frozen blackberries
- 3/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1/4 cup lemon juice
- 1 tsp lemon zest
- 1 ready-made tart shell or pie crust
Instructions

Preheat the oven to 350°F (180°C).

In a blender or food processor, puree the blackberries until smooth. Pass the puree through a fine mesh sieve to remove the seeds.

In a medium-sized saucepan, combine the blackberry puree, sugar, melted butter, eggs, lemon juice, and lemon zest. Cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon, about 10-15 minutes.

Remove the mixture from heat and let it cool slightly.

Pour the blackberry curd into the prepared tart shell or pie crust.

Bake the tart in the preheated oven for 25-30 minutes, or until the curd is set and the crust is golden brown.
