  • 1 cup all-purpose flour

  • ⅓ cup powdered sugar
  • 1 egg yolk
  • 1 cup lemon curd
  • 1 tbsp lemon zest
  • Whipped cream (optional)

Instructions

  1. Preheat oven to 350°F.

  2. In a bowl, combine flour, butter, powdered sugar, and egg yolk until the dough comes together.

  3. Press the dough into four 4-inch tartlet shells.

  4. Bake the crusts for 20 minutes, until golden brown.

  5. Allow the crusts to cool completely.

  6. Mix the lemon curd and lemon zest in a bowl.

  7. Spoon the lemon mixture into the cooled tart shells.

  8. Chill the tarts in the refrigerator for at least 30 minutes.

  9. Serve with whipped cream (optional).
