Ingredients

  • 1 prepared pie crust
  • 1/2 cup lemon curd
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 vanilla bean, seeds scraped out
  • 2 large eggs
  • Pinch of salt

Instructions

  1. Preheat the oven to 375°F.

  2. Roll out the pie crust and place it in a 9-inch tart pan. Trim the edges and prick the bottom with a fork.

  3. Bake the crust for 12-15 minutes or until lightly golden. Remove from oven and let cool.

  4. In a medium bowl, whisk together the lemon curd, heavy cream, sugar, vanilla bean seeds, eggs, and salt until smooth.

  5. Pour the filling into the cooled crust and bake for 30-35 minutes or until set and golden.

  6. Let the tart cool to room temperature before serving.
