How To Make My Grandmother's Rice Pudding

  • 3/4 cup Carolina rice
  • 3/4 cup sugar
  • 1 ½ qt whole milk
  • 3/4 tsp salt
  • 1 egg, add 1 more if desired
  • 1/2 tsp vanilla extract
  • Nutmeg , to sprinkle on top


  1. Add rice, sugar, milk and salt in a double boiler.

  2. Cook uncovered for approximately 2 hours, after 15 minutes. Stir frequently so the rice doesn't clump. Take off the stove.

  3. Beat egg and fold in the mixture with the vanilla extract. Put in a large bowl and sprinkle with nutmeg.

  4. Cover and refrigerate until cool and firm before serving.
