Preparation: 15 minutes
Cooking: 45 minutes
Total: 1 hour

  • 4 ripe pears
  • 4 cups water
  • 1 cup granulated sugar
  • 2 tbsp dried lavender
  • 1 cup whole milk
  • 3/4 cup heavy cream
  • 4 tbsp Poire Williams liqueur
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 4 egg yolks
  • 1 tsp vanilla extract

  1. In a large saucepan, combine water, sugar, and dried lavender. Bring to a boil and simmer for 5 minutes.

  2. Peel the pears, leaving the stems intact. Place the pears in the simmering syrup and poach for 20-30 minutes or until tender.

  3. Remove the pears from the syrup and set aside to cool.

  4. In a separate saucepan, heat milk, cream, and Poire Williams liqueur over medium heat until steaming, but not boiling.

  5. In a bowl, whisk together sugar, cornstarch, egg yolks, and vanilla extract until smooth and well combined.

  6. Slowly pour the hot milk mixture into the egg mixture, whisking constantly.

  7. Return the mixture to the saucepan and cook over low heat, stirring constantly until thickened, about 5-7 minutes.

  8. Remove from heat and let cool slightly.

  9. Cut a small slice from the base of each poached pear to help them stand upright.

  10. Place each pear in a serving dish and spoon the Poire Williams pudding alongside.

  11. Serve chilled or at room temperature.
