Serves:

Ingredients

  • 1 cup of arborio rice
  • 4 cups of almond milk
  • 1/4 cup of maple syrup
  • 1 tsp of vanilla extract
  • 1/2 tsp of cinnamon
  • 1 pear, peeled and diced
  • 1 cup of mixed berries (such as strawberries, blueberries, raspberries)
  • 2 tbsp of maple syrup

Instructions

  1. In a large saucepan, combine the rice, almond milk, maple syrup, vanilla extract, and cinnamon. Bring to a boil, then reduce heat and simmer for 20-25 minutes, stirring occasionally, until the rice is tender and creamy.

  2. While the rice is cooking, prepare the compote. In a small saucepan, combine the pear, berries, and maple syrup. Cook over medium heat for 5-7 minutes, until the fruit is soft and the juices have thickened slightly.

  3. Serve the rice pudding in bowls, topped with the pear and berry compote.

  4. Enjoy!
