How To Make Vegan Rice Pudding with Pear & Berry Compote

Ingredients
- 1 cup of arborio rice
- 4 cups of almond milk
- 1/4 cup of maple syrup
- 1 tsp of vanilla extract
- 1/2 tsp of cinnamon
- 1 pear, peeled and diced
- 1 cup of mixed berries (such as strawberries, blueberries, raspberries)
- 2 tbsp of maple syrup
Instructions

In a large saucepan, combine the rice, almond milk, maple syrup, vanilla extract, and cinnamon. Bring to a boil, then reduce heat and simmer for 20-25 minutes, stirring occasionally, until the rice is tender and creamy.

While the rice is cooking, prepare the compote. In a small saucepan, combine the pear, berries, and maple syrup. Cook over medium heat for 5-7 minutes, until the fruit is soft and the juices have thickened slightly.

Serve the rice pudding in bowls, topped with the pear and berry compote.
