How To Make Iced Berry Pud

Ingredients
- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 1/4 cup sugar
- 1/4 cup water
- 1 tablespoon lemon juice
- 1 cup whipped cream
- Fresh mint leaves for garnish
Instructions

In a saucepan, combine the berries, sugar, water, and lemon juice. Cook over medium heat for about 5 minutes, until the berries release their juices and the mixture thickens slightly. Remove from heat and let cool.

Once the berry mixture has cooled, pour it into a blender and blend until smooth. Strain the mixture to remove any seeds.

Pour the berry puree into popsicle molds or small cups. Insert popsicle sticks if using molds.

Place the molds or cups in the freezer and freeze for at least 6 hours or until completely solid.

To serve, remove the popsicles from the molds or cups by running them under warm water for a few seconds.

Serve the iced berry puds on a plate or in individual bowls. Top with whipped cream and garnish with fresh mint leaves.
