How To Make American-style Pancakes with Vanilla Berry Compote

Ingredients
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 3/4 cups buttermilk
- 2 large eggs
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- Vegetable oil, for cooking
- Fresh berries (such as strawberries, blueberries, or raspberries), for garnish
- For the Vanilla Berry Compote:
- 2 cups mixed berries (such as strawberries, blueberries, and raspberries)
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
Instructions

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

In another bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract.

Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix; lumps are okay.

Heat a skillet or griddle over medium heat and lightly grease with vegetable oil.

Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until golden brown.

Transfer the cooked pancakes to a plate and cover with aluminum foil to keep warm.

To make the vanilla berry compote, place the mixed berries, sugar, lemon juice, and vanilla extract in a small saucepan. Cook over medium heat for 5-7 minutes, or until the berries have softened and released their juices.

Serve the pancakes with a spoonful of vanilla berry compote on top. Garnish with fresh berries, if desired.
