How To Make Granny Cook’s Christmas Pudding

This sweet, delectable dessert is the perfect ender to any and every heavy meal! In fact, it’s great even as a stand-alone snack. Ingredients

  • 1 cup mixed dried fruits (raisins, currants, sultanas)
  • 1/4 cup chopped candied peel
  • 1/4 cup chopped almonds
  • 1/4 cup dark rum
  • 1/4 cup orange juice
  • 1/4 cup breadcrumbs
  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • 1/4 tsp baking powder
  • 1/4 cup melted butter
  • 1 egg, beaten
  • 1 tbsp golden syrup

Instructions

  1. In a bowl, combine the dried fruits, candied peel, almonds, rum, and orange juice. Let it soak for at least 2 hours.

  2. In a separate bowl, mix together the breadcrumbs, flour, sugar, cinnamon, nutmeg, cloves, and baking powder.

  3. Add the soaked fruits mixture, melted butter, beaten egg, and golden syrup to the dry ingredients. Mix well.

  4. Grease a pudding basi and pour the mixture into it. Cover with a greased parchment paper.

  5. Place the pudding basin in a large pot filled with boiling water, making sure the water reaches halfway up the sides of the basin.

  6. Cover the pot with a lid and steam the pudding for 4 hours. Check the water level occasionally and top it up if needed.

  7. Once cooked, remove the pudding basin from the pot. Let it cool slightly before turning it out onto a serving dish.

  8. Serve the Christmas pudding warm with a dollop of brandy butter or custard.
