How To Make Granny Martin’s Christmas Puddings

Ingredients

  • 1 cup mixed dried fruits (raisins, currants, sultanas)
  • 1/2 cup breadcrumbs
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter, melted
  • 1/4 cup brandy
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup milk
  • 1 egg

Instructions

  1. In a large bowl, mix together dried fruits, breadcrumbs, flour, brown sugar, melted butter, brandy, cinnamon, nutmeg, cloves, baking powder, and salt.

  2. In a separate bowl, whisk together milk and egg. Pour the mixture over the dry ingredients and mix well to combine.

  3. Grease 4 small pudding basins or ramekins with butter. Divide the pudding mixture equally among the basins, pressing it down firmly.

  4. Cover each basin with a square of greased parchment paper, then a square of aluminum foil. Secure with twine or a rubber band.

  5. Place the basins in a large pot with enough boiling water to come halfway up the sides.

  6. Cover the pot and steam the puddings on low heat for 4 hours, adding more water if necessary.

  7. Carefully remove the puddings from the pot and let them cool slightly. Remove the foil and parchment paper.

  8. Serve warm with a drizzle of brandy butter or vanilla custard.
