Ingredients

  • 2 cups of Christmas pudding
  • 4 sheets of phyllo pastry
  • 4 tablespoons of melted butter
  • 1/4 cup of breadcrumbs
  • 1/4 cup of chopped almonds
  • 1/4 cup of raisins
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Lay out one sheet of phyllo pastry and brush with melted butter. Repeat with remaining sheets.

  3. In a bowl, combine the breadcrumbs, chopped almonds, and raisins.

  4. Spread the Christmas pudding evenly on top of the phyllo pastry, leaving a border around the edges.

  5. Sprinkle the breadcrumb mixture over the Christmas pudding.

  6. Fold in the sides of the phyllo pastry and roll it up tightly.

  7. Place the strudel on a baking sheet lined with parchment paper.

  8. Brush the top of the strudel with melted butter.

  9. Bake for 30 minutes, or until golden brown and crispy.

  10. Allow the strudel to cool slightly before dusting with powdered sugar.

  11. Serve warm and enjoy!
