How To Make Eton Mess Parfait with Berry Sauce

Ingredients
- 4 meringue nests
- 1 cup heavy cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- 1 cup mixed berries (strawberries, raspberries, blueberries)
- 1/4 cup sugar
- 1/4 cup water
- 1 tbsp lemon juice
Instructions

In a bowl, crush the meringue nests into small pieces.

In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

Layer the crushed meringue, whipped cream, and fresh berries in serving glasses or jars, repeating the layers until all ingredients are used.

In a saucepan, combine the sugar, water, and lemon juice. Cook over medium heat until the sugar has dissolved and the mixture has thickened slightly, about 5 minutes.

Remove the saucepan from heat and let the berry sauce cool completely.

Pour the berry sauce over the parfait layers.

Refrigerate for at least 1 hour before serving.

Garnish with additional fresh berries, if desired.
