  • 300g raspberries
  • 1 pomegranate, seeds removed
  • 300ml double cream
  • 2 tbsp icing sugar
  • 1 tsp rose water
  • 4 meringue nests, crumbled

Instructions

  1. In a bowl, lightly crush 200g raspberries with a fork.

  2. In another bowl, whisk the double cream, icing sugar, and rose water until soft peaks form.

  3. Gently fold the crushed raspberries, pomegranate seeds, and crumbled meringue into the cream mixture.

  4. Divide the Eton mess mixture into serving glasses or bowls.

  5. Top with the remaining whole raspberries.

  6. Serve immediately and enjoy!
