Preparation: 20 minutes
Cooking: 2 hours
Total: 2 hours 20 minutes

Serves:

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup breadcrumbs
  • 1/4 cup sugar
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 cup unsalted butter, melted
  • 1/4 cup milk
  • 1/4 cup brandy
  • 1/4 cup molasses
  • 1/2 cup dried cherries
  • 1/2 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a small pudding mold or a heatproof bowl.

  2. In a large bowl, mix together the flour, breadcrumbs, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.

  3. Add the melted butter, milk, brandy, and molasses to the dry ingredients. Stir well until the batter is smooth.

  4. Fold in the dried cherries and chopped pecans.

  5. Pour the batter into the greased mold or bowl, filling it about 2/3 full. Smooth the top with a spatula.

  6. Cover the mold or bowl with aluminum foil and place it in a larger roasting pan. Fill the pan with hot water, about halfway up the sides of the mold or bowl.

  7. Bake in the preheated oven for 2 hours, or until a toothpick inserted into the center comes out clean.

  8. Remove from the water bath and let cool for 10 minutes. Then, carefully invert the pudding onto a serving plate.

  9. Serve warm with a drizzle of brandy sauce or custard.
