Ingredients

  • 1 cup arborio rice
  • 4 cups milk
  • 1/2 cup sugar
  • 1/2 teaspoon ground cardamom
  • Zest of 1 orange
  • 2 tablespoons honey
  • 1/4 cup pomegranate seeds
  • 2 oranges, peeled and segmented

Instructions

  1. Preheat the oven to 325°F (165°C).

  2. In an oven-safe pot, combine the rice, milk, sugar, cardamom, and orange zest.

  3. Stir well and bring to a simmer over medium heat.

  4. Once simmering, cover the pot and transfer it to the preheated oven.

  5. Bake for 1 hour, or until the rice is tender and the pudding is creamy.

  6. In the meantime, prepare the syrup by combining the honey and pomegranate seeds in a small saucepan.

  7. Cook over low heat for 5 minutes until the syrup thickens slightly.

  8. Remove the rice pudding from the oven and let it cool for a few minutes.

  9. Serve the pudding in individual bowls or glasses, topped with orange segments and drizzled with the honey and pomegranate syrup.
