How To Make Persian Pudding with Whipped Rose & Honey Butter

Ingredients
- 1 cup rice flour
- 4 cups milk
- 1/2 cup sugar
- 1/4 cup rose water
- 1/4 cup honey
- 1/4 cup unsalted butter, softened
- 1/4 tsp ground cardamom
- 1/4 cup crushed pistachios, for garnish
Instructions

In a large saucepan, combine the rice flour, milk, and sugar. Whisk until well combined.

Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a boil.

Remove from heat and stir in the rose water.

Pour the mixture into serving bowls or ramekins and let it cool to room temperature.

Meanwhile, in a mixing bowl, combine the softened butter, honey, and ground cardamom. Whisk until light and fluffy.

Once the pudding has cooled, dollop the whipped rose and honey butter over each serving.

Garnish with crushed pistachios.

Refrigerate for at least 2 hours to allow the flavors to meld together.
