How To Make Mini Lemon Meringue Pies

- 4 mini pie shells
- 3 large lemons
- 1 cup granulated sugar
- 4 egg yolks
- 1/4 cup cornstarch
- 1 1/4 cups water
- 4 egg whites
- 1/4 cup powdered sugar
- 1/4 teaspoon cream of tartar
- 1/2 teaspoon vanilla extract
Instructions

Preheat the oven to 350°F (175°C).

In a medium saucepan, combine the juice and zest of the lemons, sugar, egg yolks, cornstarch, and water. Whisk until smooth.

Cook the lemon mixture over medium heat, stirring constantly until thickened, about 5-7 minutes. Remove from heat and let it cool slightly.
