Ingredients

  • 4 mini pie shells
  • 3 large lemons
  • 1 cup granulated sugar
  • 4 egg yolks
  • 1/4 cup cornstarch
  • 1 1/4 cups water
  • 4 egg whites
  • 1/4 cup powdered sugar
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a medium saucepan, combine the juice and zest of the lemons, sugar, egg yolks, cornstarch, and water. Whisk until smooth.

  3. Cook the lemon mixture over medium heat, stirring constantly until thickened, about 5-7 minutes. Remove from heat and let it cool slightly.

  4. Pour the lemon filling into the mini pie shells.

  5. In a separate bowl, beat the egg whites with cream of tartar until soft peaks form. Gradually add the powdered sugar and vanilla extract, beating until stiff peaks form.

  6. Spoon the meringue over the lemon filling, making sure to seal the edges.

  7. Bake the mini pies for 12-15 minutes, or until the meringue is golden brown.

  8. Allow the pies to cool before serving.
