How To Make Mini Sweet Potato Pies

What better way to get you in a happy mood than having a slice of pie? These baked dishes are perfect for those who can’t get enough of flaky pastries. From an apple variant to a lemon meringue, these pies pastries recipes will satisfy your pie and pastry cravings.

Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1/4 cup brown sugar
  • 1/4 cup melted butter
  • 1/4 cup milk
  • 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 refrigerated pie crust
  • Whipped cream, for topping

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Boil the diced sweet potatoes until tender, then drain and mash them in a mixing bowl.

  3. Add the brown sugar, melted butter, milk, vanilla extract, cinnamon, nutmeg, and salt to the mashed sweet potatoes. Mix well to combine.

  4. Roll out the refrigerated pie crust and cut out small circles that will fit into your mini pie dishes.

  5. Press the pie crust circles into the mini pie dishes, trimming any excess dough.

  6. Fill each pie crust with the sweet potato filling.

  7. Place the pies on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.

  8. Remove from the oven and allow to cool before serving.

  9. Top each mini sweet potato pie with a dollop of whipped cream before serving.
