How To Make Mini Bakewells

Ingredients

  • 1 cup almond flour
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 egg
  • 1/2 tsp almond extract
  • 4 tbsp raspberry jam
  • 4 tbsp icing sugar

Instructions

  1. Preheat the oven to 350°F (180°C). Grease a mini tart tray.

  2. In a mixing bowl, combine almond flour, sugar, softened butter, egg, and almond extract. Mix until well combined.

  3. Press the almond mixture into the bottom of each tart cavity, creating a small well in the center.

  4. Spoon 1 tablespoon of raspberry jam into each well.

  5. Bake in the preheated oven for 20 minutes, or until the pastry is golden brown.

  6. Remove from the oven and let cool for a few minutes.

  7. Mix icing sugar with a little water to create a thick icing. Drizzle the icing over the cooled mini bakewells.

  8. Serve and enjoy!
