  • 1 pre-made pie crust
  • 8 oz cream cheese, softened
  • 1/3 cup sugar
  • 1/2 cup coconut milk
  • 1 tsp vanilla extract
  • 1 cup mixed fresh fruit (such as strawberries, kiwi, mango, pineapple)

Instructions

  1. Preheat oven to 375°F.

  2. Bake pie crust according to package instructions and set aside to cool.

  3. Beat cream cheese and sugar until smooth.

  4. Mix in coconut milk and vanilla extract.

  5. Spread mixture onto cooled pie crust.

  6. Arrange fresh fruit on top of cream cheese mixture.
