  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • 1/2 cup canned pumpkin puree
  • 1/4 cup vegetable oil
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/2 cup dried cranberries

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.

  3. In a separate bowl, mix together the pumpkin puree, vegetable oil, milk, and vanilla extract.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined.

  5. Fold in the dried cranberries.

  6. Grease a muffin tin or line with paper liners.

  7. Fill each muffin cup about 2/3 full with the batter.

  8. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

  9. Allow the muffins to cool for a few minutes before transferring to a wire rack to cool completely.
