  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp pumpkin pie spice
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup canned pumpkin puree
  • 2 eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with 12 paper liners.

  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin pie spice.

  3. In a large bowl, combine the granulated sugar, brown sugar, melted butter, pumpkin puree, eggs, and vanilla extract. Mix until well combined.

  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

  5. Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.

  6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  7. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
