How To Make Pumpkin Muffins

Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tsp pumpkin spice
  • 1 cup canned pumpkin puree
  • ½ cup brown sugar
  • ¼ cup vegetable oil
  • ¼ cup milk
  • 1 tsp vanilla extract
  • 1 egg

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.

  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin spice.

  3. In a large bowl, mix together the pumpkin puree, brown sugar, vegetable oil, milk, vanilla extract, and egg until well combined.

  4. Gradually add the dry ingredients to the wet ingredients, stirring just until combined.

  5. Divide the batter evenly among the muffin cups, filling each about ¾ full.

  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.

  7. Allow the muffins to cool for a few minutes in the tin, then transfer them to a wire rack to cool completely.
