Ingredients

  • 1 cup bran flakes
  • 1 cup whole wheat flour
  • 1/4 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1/4 cup unsweetened applesauce
  • 1 egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a muffin tin.

  2. In a large bowl, combine the bran flakes, whole wheat flour, brown sugar, baking powder, baking soda, and salt.

  3. In a separate bowl, whisk together the milk, vegetable oil, applesauce, egg, and vanilla extract.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined.

  5. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.

  6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  7. Remove from the oven and let cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
