Looking for something sweet, but need to monitor your sugar levels? Try this low-sugar pineapple bars recipe! The sweetness of the bars comes entirely from the pineapple, so there is no refined or white sugar being used. These treats might be a healthy treat, but you won’t be able to tell.
Diabetic No-Bake Pineapple Bars Recipe
- 3/4 cup pineapple chunks drained
- 1/4 cup orange extract
- 1/2 cup pineapple juice unsweetened
- 1 large egg
- 1 tbsp vegetable oil
- 1 ½ cup flour
Place 1/4 cup of the pineapple chunks in a food processor and blend until smooth.
Transfer the purée in a large bowl.
Add in the orange extract, pineapple juice, egg and oil. Stir well.
Transfer the mixture in the container of a stand mixer and mix the ingredients at a low speed.
Remove the purée from the mixer and add the remaining pineapple chunks into the purée. Blend for 1-2 mins until smooth.
Use a spatula to stir the mixture.
Prepare a baking pan with parchment paper and place the purée on the paper. Refrigerate for 2-3 hours and cut into bars to serve.
