  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup honey
  • 1/4 cup packed brown sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a medium bowl, combine the rolled oats, flour, baking soda, cinnamon, and salt. Set aside.

  3. In a separate large bowl, cream together the softened butter, honey, brown sugar, and vanilla extract until smooth and well combined.

  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  5. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

  6. Bake for 10-12 minutes, or until the edges are golden brown.

  7. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
