- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup extra virgin olive oil
- 1/4 cup whole milk
- 1 teaspoon vanilla extract
- 1/2 cup fresh strawberries, diced
- 1/4 cup pistachios, chopped
Instructions

Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.

In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.

In another bowl, combine the olive oil, milk, and vanilla extract. Gradually add this mixture to the dry ingredients, stirring until well combined.

Gently fold in the diced strawberries and chopped pistachios.

Pour the batter into the prepared cake pan and smooth the top with a spatula.
