Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup milk
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, diced
  • 1/4 cup sliced almonds

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a square baking dish.

  2. In a large bowl, cream together the sugar and butter until light and fluffy.

  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

  4. In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the dry ingredients.

  5. Gently fold in the diced strawberries.

  6. Pour the batter into the prepared baking dish and sprinkle with sliced almonds.

  7. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the coffee cake to cool before serving.
