Ingredients

  • 8 flour tortillas
  • 2 cups cooked chicken, shredded
  • 2 cups Swiss chard, chopped
  • 1 cup Swiss cheese, grated
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/4 cup flour
  • 2 tablespoons butter
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a skillet, melt the butter over medium heat. Add the diced onion and minced garlic, and sauté until softened.

  3. Add the chopped Swiss chard to the skillet and cook until wilted.

  4. Stir in the shredded chicken, cumin, chili powder, salt, and pepper. Cook for an additional 2 minutes.

  5. In a separate saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute.

  6. Gradually whisk in the chicken broth and heavy cream, until the mixture is smooth and thickened.

  7. Remove from heat and stir in the grated Swiss cheese until melted.

  8. Spread a spoonful of the sauce onto the bottom of a greased baking dish.

  9. Lay a tortilla flat and fill with a scoop of the chicken and Swiss chard mixture. Roll up tightly and place seam-side down in the baking dish. Repeat with remaining tortillas.

  10. Pour the remaining Swiss cheese sauce over the filled tortillas.

  11. Bake in the preheated oven for 30 minutes, or until the enchiladas are hot and bubbly.

  12. Serve the Swiss Enchiladas hot, garnished with fresh cilantro, and enjoy!
