Ingredients

  • 2 chicken breasts, grilled and sliced
  • 2 cups broccoli florets
  • 1/2 red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup sliced almonds
  • 1/4 cup dried cranberries
  • 1/4 cup crumbled feta cheese
  • Salt and pepper, to taste
  • dressing:
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper, to taste

Instructions

  1. In a large mixing bowl, combine the grilled chicken, broccoli florets, red onion, cherry tomatoes, sliced almonds, dried cranberries, and crumbled feta cheese.

  2. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, salt, and pepper to make the dressing.

  3. Pour the dressing over the salad and toss until well coated.

  4. Serve chilled and enjoy!
