  • 1 pie crust
  • 1 tablespoon olive oil
  • 1 cup sliced mushrooms
  • 1 cup chopped asparagus
  • 1/2 cup shredded gruyere cheese
  • 4 eggs
  • 1/2 cup milk
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and place the pie crust in a 9-inch pie dish.

  2. In a skillet, heat the olive oil over medium heat. Add the mushrooms and cook until softened, about 5 minutes. Add the asparagus and cook for another 3 minutes. Remove from heat.

  3. Spread the mushroom and asparagus mixture evenly over the pie crust. Sprinkle the gruyere cheese on top.

  4. In a bowl, whisk together the eggs, milk, salt, and pepper. Pour the egg mixture over the vegetables and cheese in the pie crust.

  5. Bake in the preheated oven for 35-40 minutes, or until the quiche is set and golden brown on top.

  6. Remove from the oven and let cool for a few minutes before serving.
