  • 2 cups of fresh spinach, chopped
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 tbsp of olive oil
  • 8 flour tortillas
  • 1 can of enchilada sauce
  • 1 cup of shredded cheese (cheddar or Mexican blend)
  • Salt and pepper, to taste


  1. Preheat the oven to 375°F (190°C).

  2. In a skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic. Cook until the onion becomes translucent.

  3. Add the chopped spinach to the skillet and cook until wilted. Season with salt and pepper to taste.

  4. Warm the flour tortillas in a microwave or on a hot skillet to make them pliable.

  5. Spoon a generous amount of the spinach mixture onto each tortilla and roll them tightly.

  6. Pour a small amount of the enchilada sauce into the bottom of a baking dish.

  7. Place the rolled tortillas seam side down in the baking dish. Pour the remaining enchilada sauce over the top of the enchiladas, covering them completely.

  8. Sprinkle the shredded cheese evenly over the enchiladas.

  9. Bake in the preheated oven for about 20 minutes or until the cheese is melted and bubbly.

  10. Serve the spinach enchiladas hot and garnish with chopped fresh cilantro, if desired.
