  • 1 whole chicken, cut into pieces
  • 8 cups of chicken broth
  • 2 carrots, sliced
  • 2 stalks of celery, sliced
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 bay leaf
  • 1 sprig of fresh thyme
  • 1 cup of all-purpose flour
  • 1/2 teaspoon of salt
  • 2 eggs
  • 1/4 cup of milk

Instructions

  1. In a large pot, combine the chicken, chicken broth, carrots, celery, onion, garlic, bay leaf, and thyme. Bring to a boil and then reduce heat to a simmer. Cook for 1 hour, until the chicken is cooked through and tender.

  2. In a medium bowl, mix the flour and salt together. In a small bowl, whisk the eggs and milk together. Gradually add the flour mixture to the egg mixture, stirring until a dough forms. Roll out the dough on a floured surface and cut into thin strips for the noodles.

  3. Remove the chicken from the soup and shred the meat. Discard the bones and return the shredded chicken to the pot. Add the homemade noodles and cook for an additional 10 minutes, or until the noodles are cooked through.

  4. Season the soup with salt and pepper to taste. Remove the bay leaf and thyme sprig before serving.

  5. Serve hot and enjoy!
