How To Make Israeli Sabich Sandwich

A flavourful sandwich stuffed with crispy eggplant, hummus, hard-boiled eggs, and fresh veggies.

Serves:

Ingredients

  • 1 large eggplant, sliced
  • 1/2 cup of flour
  • 1 tsp of paprika
  • Salt to taste
  • 4 pita breads
  • 1/2 cup of hummus
  • 4 hard-boiled eggs, sliced
  • 1 cucumber, sliced
  • 1 large tomato, sliced
  • 1/4 cup of chopped parsley
  • 1/4 cup of chopped mint
  • 1/4 cup of chopped cilantro
  • 1/4 cup of pickled onions (optional)
  • 1/4 cup of amba sauce (optional)

Instructions

  1. Preheat oven to 400°F.

  2. Season eggplant slices with salt and set aside for 5 minutes.

  3. Mix flour, paprika, and a pinch of salt in a bowl.

  4. Dredge eggplant slices in the flour mixture and shake off any excess.

  5. Place the eggplant slices on a baking sheet and bake for 20 minutes or until golden brown.

  6. Warm the pita breads in a toaster or oven.

  7. Spread hummus on the pita breads, then layer with egg slices, sliced cucumber, tomato, parsley, mint, cilantro, pickled onions (if using), and amba sauce (if using).

  8. Top with the crispy eggplant slices and fold it in half.

  9. Serve and enjoy your sabich sandwich!
